I am a Special Edcuation Teacher, as well as a parent of an incredible son who is dyslexic, and has responded the same way as the student you were reading with. What we have incorporated is a signal that he gives for me to step in when he is getting frustrated. Sometimes he will fight with a word for a couple of minutes (feels like hours) and when he gets it we all do the happy dance. A great celebration! This strategy works well because if he isn't in the mind frame to figure it out on his own then I just help him quickly and his reading is relatively stressless. If the child is a teenager, they appreciate this technique because then they have some control of the situation.
