What happened to our goal of becoming an elite PvP guild? Is that possible in WoW? How do we do it?

If our goal is to become an elite PvP guild, then we should spend more time practicing and doing PvP instead of doing instances all the time. Also, I believe we could learn more from PvP sessions against each other than against horde. That means practice like we did in UO.
I remember in UO how strong we were right after we had a guild practice. We were so sharp, that I don't remember anyone winning a fair fight over us. I would say we were at least 30% stronger right after a practice.
Will this apply in WoW? Does WoW demand the same skill from a team, that such practice is at all worth it?
