Ok.. well the answer, as always, depends on what you plan to do with them. For pvm in a group situation, you *can* get away with less balanced stats and eg no focus. But if you want to pvp you need resist (unless its an assassin type char) and balanced stats and some way to regenerate mana.

Resist: the way it works now is, as you have probably gathered, some spells target the elemental resists and some - Clumsy, Curse, Feeblemind, Weaken, Mana Drain, Mana Vampire, Para, Para Field, Poison, Poison Field and the necro spells Blood Oath, Corpse Skin, Mind Rot, Pain Spike -can be resisted by the resist skill.

1. Trent - needs to be able to recall and some way to regen stam you say - I'm guessing this means you want to use him in Fel? Also, since working up resist is so painful, I'll assume you want to keep that.
Option 1 - As you are only getting 30% damage bonus from your 100 points of LJ - see http://uo.stratics.com/content/arms-armor/combat.shtml#damage the simplest solution is to drop LJ for 50-60 magery and the rest in focus.

If you *really* can't bear to part with LJ then yes you would have to lose parry - personally I think you would be better off keeping it due to the ability to parry special moves which represent your biggest threat from dexxers. Parry + resist gives you a decent defensive capability, albeit you still won't do well against someone who has scrolled these, has faster conn, artis etc.

With resist skill, you can tolerate the lower resists of stamina + mana regen armour to help with your stats problem.

Option 2 is the paladin, it's hard to go past for flexibility although only 3 of the spells: consecrate weapon, divine fury and dispel evil (which works as a necro debuff) are of much use in pvp. Lack of magery is a pain so I'll leave that in, although if you can't get your hands on a decent stam+mana regen suit you will need those points in focus. Numbers:

Option 1 - Least Change
Swords 120*/Parry 100/Tactics 100*/Anat 100/Resist 105/Heal 90/Focus 50/Magery 50

Option 2 - Paladin
Swords 120*/ Parry 100/Tactics 100*/Anat 100/Resist 105/Chivalry 90/ Focus 50/Magery 50

*You will need to scroll your primary weapons skill to enhance your hit chance - as high as possible as in these examples - but remember you can use jewellery to complete it, if you don’t want to shave points off other things. If you have points left after that, scroll tactics.
2. For Sandon, even tho you want to keep your stealth & hide, there are a few options, depending how much you want to change & what you want to do:
For pvm, again I'd advocate dropping heal for 70 - 90 chivalry (no need to GM it). You will fizz a bit on EoO so you may want to add some lrc to your armour (or wear chivalry jewellery).

You could also try shaving 20 points off stealth to add to focus. The downside of 80 stealth vs GM is just 4 steps less + you can't reliably stealth in studded armour, but you will never fail in leather. You'd probably want some mana regen on your armour too.
To be honest tho, this is not the strongest of pvm templates as it basically wastes the stealth/hide, for pvm you would be better off using the points to scroll up macing/tacs/anat/resist/focus & have GM chiv for extra dmg, heal/cure & recall.

On the other hand the best pvm templates atm (my opinion and yes I'm biased! ;-) have peace & chivalry - Option 2. exchanges hiding and stealth for 115/115 music/peace and scroll up your weapons skill and tactics, taking points from focus. Resist is optional with peace/pally, although with the extra pvm dmg from consec weapon and EoO you could drop GM anat for GM resist (specially if you want to wear low resist lrc armour):

Option 1 - shadow paladin (pvm)
chivalry 80 / macing 110 / tacs 110 / anat 100 / stealth 80 / hiding 100 / resist 80 / med or focus 55

Option 2 - peace paladin (pvm)
music 115 / peace 115 / macing 115 / tactics 115 / anat 100 / chivalry 90 / focus 65

A further possibility if you want an evil char is to switch macing for fencing + the ability to apply poison - the # 1 reason that assassins are usually fencers. Alternatively if you really want to keep macing, find yourself a spell channel UBW dagger (dagger has infecting and shadow strike, cant go past it). Add magery and nox for the classic dexxer assassin (Option 3).
With the few points remaining, plan to scroll up your weapon skill as much as possible, also tactics as you will be relying on this for damage.
This allows you to poison in 2 ways, cure/heal using magery and regenerate mana. Even so you need to balance your stats more, try at least 40 int. You now have focus to regen your stamina so you can afford to cut dex a bit.

Or for a different flavour try a necro assassin (Option 4). This sees you not relying on your weapon for damage at all, instead you use a dagger just to poison and then you strangle/wither/PS/rev them to death. Strangle and PS's cast repeatedly will disrupt mages. Corpse skin + evil omen + either mb, poison/poison strike or exp/fs are also very powerful combos. In wraith form you can recall, and use SS to heal, and also push thru ppl in Fel.

The big weakness for 3 and 4 is defence, they are not good duelling or pvm templates for that reason - so only go with this if you are happy to use assassin tactics, and hide/run if needed - and plan to get yourself a good resist suit. NB it will have to be leather (spined/horned barbed) armour or you have the chance of failing stealth.
With this template there is no real point to keeping macing as you wont damage anyone without tactics, swap it out for fencing and use regular poisoned weapons.
Having 90 poisoning on the template allows you 90% chance to increase the level of poison applied (from dp to lethal for eg) and also use less mana. 80.1 poisoning is enough to let you poison your weapon without fail. However, many think its not worth even 80 points - even lethal poison can easily be cured currently.
So a tweak to both of these templates, which would be attractive if you have poisoning on Jamieson already (?) is to forget about poisoning on them and take resist instead. You can trim 10 pts from stealth to get GM resist - you wont fail to stealth at 80 in leather armour.

Option 3 - dexxer assassin
magery 95 / fencing/macing + UBW spell channel dagger 115 / tacs 115 / stealth 90 / hiding 100 / focus 100 / resist or poisoning 100

Option 4 - necro assassin
spirit speak 115 / fencing 110 / necro 110 / stealth 90 / hiding 100 / med 100 / resist/poisoning 90

*fencing, or macing + UBW spell channel dagger
