You can hold different types of one-handed weapons (for example, a sword and a dagger or 2 daggers or 2 swords).

I think they added in half-orcs. I don't remember exactly (since I just sort of imported my human conjurer from Baldur's Gate and went on from there). There are new character classes (Monk, Barbarian and Sorcerer) and all of the old classes now have specialized kits (sort of like the mage had specialized schools of magic, all the rest get specialized groups as well that have bonuses and abilities unique to them).

I don't use stealing too much. Picking locks is still annoying (added to the fact is that thief extraordinaire Imoen is removed from play for story reasons almost immediately after you start the game and you're left with inadequate replacements till you find the crazy Inventor Gnome Thief-Illusionist or find her again later in the game). I usually just have my mage memorize a "Knock" spell to avoid the agony of failing the lock pick attempts.

I usually play as the Chinese, but that was before I picked up the expansion pack. Now that I have that, I'll have to check out the new civs. I usually play Regicide on a random map.
