Thelma, Sounds like you cook like I do . . . by feel, taste or look?

I do much the same as Thelma does except I don't use the Onion Soup mix unless I'm in a hurry. I let the meat cook all day on low (like 6 hours) with herbs like Italian Seasoning (found in the seasoning dept at the grocery store) or fresh herbs (basil, oregano, tyme, rosemary, whatever you like). . . the dried stuff is easier. Just measure out a couple of tablespoons full or three. well the fresh stuff is easy in that you don't have to chop anything just take it out before adding the veggies.) Then after the meat is tender add chopped up onion and celery (actually the onion and celery can cook with the meat it'w better that way). About an hour or so before you want to eat, cut up the other veggies (potatoes, carrots, etc. I also add lentils, barley, alphabet noodles sometimes too).
Then salt and pepper to taste.

Good Luck with the Stew. Remember you really can't ruin stew. Stew is just a bunch of stuff thrown together and cooked. Just don't over-season with salt and pepper before you taste it.
