When you're the head of a program/sport/activity and you're constantly bombarded with questions of why are things such and such a way... it's easy to fall into a defensive posture. The comments you related tells me one thing that is probably 'as accurate' or 'more accurate' than what you mentioned and that is that the coach needs some time off to reinvigorate his creative juices. I'd speculate... and with a lot of confidence... that that same coach would have different answers if asked the same questions after some time off.... say next fall?

However, I certainly agree with your conclusion if this coach carried that same posture 365 days a year.

If I recall the head baseball coach is new to D-1. He, or his assistants, may not be accustomed to the pressure as what they may have experienced at a JC.... so, what I am saying is that the coach may feel out of his element this season??? Dunno know?
