I'm not sure about this. We will need to isolate what is the difference between your program and the demo program. Are you performing a transformation before saving?

JPEG does not support 256 color images, but does support gray scale images. If you have a 256 color image and would like to save it as JPEG, you first need to convert to ifTrueColor.
