Here's another biggie, KW could also play special teams (he still collects tackling stats in Houston to this day).

Coffman is apparently too tall & rangy (thus the same bending at the waist/knees problem I've theorized also keeps him below par as a blocker) and apparently not fast enough or a good enough tackler to contribute on coverages. To be a bottom of the gameday WR/TE (and thus make the active roster and/or field) you've GOTGOTGOT to contribute somehow on teams.

I've wondered whether he could be a #2 WR before, but seeing him in camp he seems too bulky to work in that role (plus we like good blockers there too) ... making him the dreaded "tweener" that doesn't quite fit.

Ironically, featuring him at TE in a true spread O MIGHT be the ticket that would get him on the field, but that's a long shot (impossible here behind Gresham). Again, anybody in the league could have come calling for him for nothing before now but they didn't.

With a brand new ex-college HC & staff in Tampa perhaps there's a former position coach/recruiter/opponent on staff willing to take a flyer on him (from memory) there?
