Subject: Broccoli Cornbread

I'm sure I've posted this at some time, but it's almost soup and cornbread time. Also, I was in here printing it for a co-worker. It's 58 here right now, but it was cooler a couple of days ago. It warms up though. We are about to go riding on the Harley:)


BROCCOLI CORNBREAD

2 pkg. yellow cornbread mix
2 sticks margarine or butter, melted
12 oz. small curd cottage cheese
4 eggs
7 oz. chopped green chilies
10 oz. frozen chopped broccoli, thawed

Mix margarine, cottage cheese, eggs, green chilies, and broccoli with cornbread mix.
Pour into hot pan (9x12) sprayed with Pam. Bake at 350° for 35-40 min. or until brown on top.
