Crepes Ensenada

12 thin slices ham
1 pound Monterey Jack cheese -- cut into 1/2-inch
strips
1 can whole green chiles -- cut into 1/4-inch
strips
12 flour tortillas
INGREDIENTS for Cheese Sauce:
1/4 pound butter
1/2 cup flour
1 quart milk
3/4 pound Cheddar cheese -- grated
1 teaspoon prepared mustard
1/2 teaspoon salt
1 Dash pepper
Paprika


1. Divide ham, cheese and chile strips among tortillas.
Place on top of tortillas; roll and secure, if necessary, with a toothpick.
2. Place tortilla rolls into a lightly greased 9x13-inch baking dish, separating them slightly.
3. Preheat oven to 350 degrees.
4. Prepare Cheese Sauce: Melt butter in a saucepan. Blend in flour and cook, stirring, for a few minutes.
5. Add milk slowly, stirring constantly to avoid lumps, then add cheese, mustard, salt and pepper. Stir until smooth.
6. Pour Cheese Sauce over tortillas and sprinkle with paprika. Bake for 45 minutes.
