Subject: Honey-Cashew Confections

This is so yummy! Once you start eating these, you can't stop-that's how good they are!! Enjoy!! Sharon:)

CRUST

1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup unsalted butter, chilled, cut up

TOPPING

1 cup packed brown sugar
1/2 cup unsalted butter
1/4 cup honey
1/4 teaspoon cream of tartar
2 cups whole salted cashews

1) Heat oven to 350 degrees. Spray 13x9 inch pan with nonstick cooking spray. Combine flour, 1/2 cup brown sugar and salt in food processor; pulse until blended. Add 1/2 cup butter; pulse until mixture resembles coarse crumbs. Press crumb mixture in bottom of pan. Bake 10 to 12 minutes or until light brown.

2) Meanwhile, combine 1 cup brown sugar, 1/2 cup butter and honey in medium saucepan; cook over medium-low heat 6 to 7 minutes or until mixture comes to a boil, stirring frequently. Remove from heat. Add cream of tartar; mix well.

3) Spread cashews evenly over crust. Pour brown sugar mixture evenly over nuts. Return to oven; bake an additional 10 to 12 minutes or until bubbly and lightly browned. Cool in pan on wire rack 20 to 25 minutes. Cut into bars while still warm. Cool completely. Makes 48 bars.
