Subject: Shepherd's Pie

This is one of my youngest son's favorites. Although he is grown and gone and on his own now, he always looks forward to this when he comes home.

SHEPHERD'S PIE

2 pounds lean ground beef

2- 10 ounce cans cream of chicken soup

2 eggs, slightly beaten

1/2 cup dry bread crumbs

1/4 teaspoon salt

1/8 teaspoon black pepper

1- 15 ounce can creamed corn

3 cups hot mashed potato

Mix the ground beef, 1 can of the cream of chicken soup, eggs, bread crumbs, salt and pepper. Put in lightly greased 9" x 13" pan. Bake 350 degrees for 30 minutes. Drain fat off. Cover with the can of creamed corn then top with the hot mashed potato. Spread the remaining can of cream of chicken soup over the potato. Return to the oven for 30 more minutes.
