Well you all know by now,,, I love to cook,,,,so I decided to start this topic ,,so we could all share some recipes ,,,,,or just try some other peoples recipes,,,,I thought it would be a cool idea since the holidays are coming quick and we can share some of our favorite dishes,,,,,I want everyone to feel free to share on this topic,,,,,,,

Stuffed Lobster
OH MY GOD THIS IS GREAT

2 -2Lb live lobsters,,,,
1 cup fresh Or canned crabmeat,,,,,
1 cup fresh shrimp (small)
1 stick butter (softened)
1 cup bread crumbs (seasoned)
1Egg
1/4 cup olive oil
1Tbsp minced garlic
---------------------------------------------------------------------------------------------------
On a cookie sheet or in a broiling pan ,,, take the lobsters turn them upside down ,(belly up),,,, take a big knife and cut them down the middle from head to tail and split them open,,,, a kitchen scissor might be easier for some of you,,,,,,,,
In a bowl ,,,, Put the crab, shrimp,garlic, egg and 3/4stick of the butter mix together,,,, add the bread crumbs and olive oil,,,, mix thoroughly ,,,,,with a Tbsp,,, stuff the Lobsters from the middle of the body to the middle of the tail,,,,,,,,,cut pats with the remaining butter and place on top of the stuffing,,,,,,
Place under the broiler on high,,for aprox.12-16 mins,,,,,,, will be done when shell is bright red,,,,,,,,,,,

Baked Macaroni & Cheese
This is a favorite in our family we have it at all our holiday dinners

1LB #9 Spaghetti
1 block Cracker Barrel Ex sharp cheddar (shredded)
1 Egg
2cups Milk
1/4 stick butter
1 Tsp salt
1/2 Tsp pepper
---------------------------------------------------------------------------------------------
Boil Spaghetti ,,,, Drain and set aside,,,,,
In a large casserole dish (oven safe) mix half the milk and the Egg and salt & pepper,,,,,,,,,,
Add the spaghetti to the milk egg mixture
Mix in the shredded cheddar leaving a heavy coat of cheese on the top
Pour in the rest of the milk (the milk should just be shy of the top) add more if needed,,,,,,,,,,,
Top with 4 or 5 pats of butter,,,,,,,,,,,,
Bake in oven 45 mins @ 350 degrees until the top is bubbling golden brown,,,,,

Below is one of my faves....and I have it 2-3 times per week...either for lunch or dinner...

LEGGY'S VEGGIE BAGEL

(1) bagel (your choice, but I prefer either sundried tomato or whole wheat)

(1) tbl veggie cream cheese
cucumber slices
sliced tomatoes
leaf lettuce
purple onions
green pepper rings
sprouts

Toast bagel and add veggies and cream cheese...voila!!!

BETTER THAN SEX CAKE
(not a bad substitute)


1 package german chocolate cake mix
1 small can sweetened condensed milk
1 can Hershey syrup
1 8oz container Cool Whip
2 bars Heath or Skor candy

Bake cake. Poke holes in cake with the end of a wooden spoon while it's warm. Pour milk over cake then chocolate syrup. Chill in refrigerator for 1-1/2 to 2 hours. Put Cool Whip on cake then sprinkle the crushed candy bars on top. Refrigerate until ready to serve.

PS - this makes Great bedroom food (where do you eat/play? post) hehe

this is an old favorite of mine...

MY MY MISS AMERICAN PIE....

ingredients:

whipped cream (in the can)
chocolate syrup
chopped nuts (optional)
sprinkles (also optional)
pineapple topping
strawberry topping
banana (to taste)
cherries
pineapple juice
your significant other

ok, here's what you do... (you can do this with either sex, but for this example i will use a female.

preparation: have your mate drink a tall glass of pineapple juice one half hour before you begin preparing the pie (orange juice if it is a guy, i will explain later)

take your significant other and undress her, lying her flat on a solid surface (ruhs and materials stain easily, so i would recommend a table or other solid surface (you can substitute the solid surface with a plastic drop cloth)

PINEAPPLE UPSIDE DOWN CAKE

1 packaged cake mix( vanilla,lemon ,pineapple) *I use pineapple*
1 can Dole pineapple rings
Half cup marachino cherrys
1 & 1/2cup brown sugar

OK,,, I make this in a black iron frying pan ,,,but those of you that do not have one,,, can use a glass cake pan ,,, this one is a snap,,,,preheat oven to 350,,,,, grease and flour your pan.....
Take the pinapple rings and make a circle on the bottom of the pan one in the middle (6 pineapple rings),,,, In each hole put a cherry and place remaining cherrys in between the pineapple rings ,,,,Take the brown sugar and cover the pineapple and cherrys thoroughly ,,,,,,pat down firmly ,,,make the cake mix ....pour on top ,,,,, place in 350 degree oven for 50 mins or until done ,,,,check with toothpick in the middle ,,, if toothpick comes out clean ,,,,its done ,,cool 15 mins ,,,, place upside down on cake plate ,,,and remove pan

OVEN FRIED POTATOS
You guys gotta try these!!!!!!!!

5 or 6 big potatos (peeling optional) cut into chunks ,wedges
1 stick butter (or more) the more the better !! lol
2 tbsp minced garlic
1 tbsp basil
1 tbsp oregano
salt &pepper

Pre heat oven to 350........
In a roasting pan melt the butter add the potatos making sure you coat them with the butter (flip them around ,get all sides) sprinkle the garlic and the other spices on top ,,,,,,, put them in the oven for an Hour and Ten mins ,,,,, after 30 mins you MUST flip them and every 15 till the're done they "will" stick,,, but flipping them give this GREAT buttery coating golden brown crispy ,,,,

Chicken in Vin Santo

1 4lb chicken cut in 10 pieces
1 tablespoon butter
2 tablespoons extra-virgin olive oil
2 large onions,cut into 1/4 inch thk slices
1 tablespoon minced garlic
3/4 cup dry white wine
1/4 cup sweet vin santo (an italian wine)
chopped fresh parsley

Sprinkle chicken with salt and pepper.Melt butter with oil in a heavy large pot over medium heat.Working in batches,add chicken to pot and cook until brown on all sides,about 8 minutes.Transfer chicken to bowl.
Reduce heat to medium-low.Add onions and garlic to pot:saute until tender and pale golden.Stir in 3/4 cup dry white wine.Return chicken and any juices to the pot.Reduce heat to low.Cover and simmer for 15 minutes.Uncover and simmer until chicken is cooked through,about 15 minutes.
Stir in vin santo.Sprinkle with parsely and you're all set.

GARLIC SHRIMP AND PASTA

(1) lbs. of linguine
(2) lbs. of large shrimp, peeled & deveined
(1-1/2) cans chicken broth
(2) heaping tbs. cornstarch
(1) cup of water
(1/4) cup of freshed chopped parsley (flat leaf)
(2) tsp. grated lemon rind
(2) tbs. chopped garlic
(2) tbs. olive oil
(1/4) tsp. red pepper
(2) tbs. lemon juice

In a large skillet, sautee parsley, garlic, lemon rind and red pepper in olive oil. Add shrimp and lemon juice; cook and stir until shrimp turn pink. In large bowl, combine chicken broth, cornstarch and water....whisk until smooth and add to shrimp mixture. Simmer until sauce thickens...stirring occasionally.

Serve over linguine with fresh Italian bread and a chilled Pinot Grigio.

Un-Healthy Nachos

I don't really cook, so this is more of a "snack".... It's good for a lazy Sunday afternoon while watching football. And, it's VERY easy.

1lb lean ground beef
1 packet taco seasoning
1 bag Tostitos™
2 pkgs. shredded cheese. (I prefer monteray jack & a mild cheddar or mj & a fresh mozzarrella sp?)


Okay..... brown the meat,drain, and throw the taco shit in there..... Ya know, MAKE TACO MEAT. Alrighty, you're almost done! Dump some Tostitos on a paper plate, cover with a layer of taco meat, then add a layer of cheese to the top. Now, pop the whole thing in the microwave until the cheese melts. (around 1 minute) Walaa!! magnifique!

EZ Happy Family Soup

Toss all ingredients in a pot
chicken breast, skinless, cut in strips
1 cup water
2 cans chicken broth
1 cup scallops
1 cup shrimp
1/3 cup of corn
1/4 cup uncooked rice
1/2 cup broccoli florets
1/2 cup cauliflour
1/2 cup carrot slices
1/4 cup mushrooms
1 TB cumin
salt, pepper to taste
let it simmer for 20 mins. while you
go do something more important.

any variation of ingredients..
no hard and fast rules here.

U like perky? Add a little lemon squeeze to each
serving bowl.

buying mostly organic goodies from
Trader Joe's..
this is sooo tasty AND EZ

Shake Shake Shake Greek Salad

arugula, or any salad mix, as much as u like
1/2 medium cucumber, sliced thinly
2 tomatoes, thinly sliced
purple onion, 3 slices
black olives as much as you like
1/3 cup garbanzo beans
feta cheese as much as you like
shake shake shake


3 TB extra virgin olive oil
3 TB apple cider vinegar
1 TB lemon
seasalt, pepper, garlic powder to taste
(add when ready to eat)

Also, add/subtact ingredients as you wish.

Omg, orgasmic.


when going dating/dancing later, skip garlic/onions

YUMMY POT ROAST & GRAVY

1 Nice sized rump roast
3 medium onions (diced)
2 cups baby carrots
8 cups water
1/2 cup flour in a plastic bag
1 Tsp vinegar
2 Tbsp salt
1Tbsp pepper
1/3 cup corn starch

Put roast in plastic bag with flour ,,, coat the roast ,,,in a large heavy pot brown all sides of the meat,,,,, add onions and stir around till they start to turn brown,,,,,add water,,vinegar and carrots ,salt &pepper ,,, bring to boil,,,, turn down to low,,,,, cover tightly and simmer 2 1/2 hours ,,,,,,add cold water to the corn starch and mix till dissolved ,,,, stir in to thicken gravy and finish on low 30 more mins

Dutch apple cake

1/2 cup shortening
1 cup white sugar
1 egg
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
2 apples - peeled, cored and cut into eighths
1/4 cup white sugar
1 teaspoon ground cinnamon


Directions
1- Sift flour with baking powder and salt.
2- In a large bowl, cream shortening and 1 cup sugar until light. Beat in egg and vanilla until fluffy. Add sifted ingredients to the creamed mixture alternately with milk, beginning and ending with the sifted ingredients. Spread the batter into a greased 7 x 11 inch baking pan.
3- Place apple pieces in rows on the batter with the sharp edges pressed in slightly. Sprinkle 1/4 cup sugar and cinnamon on top.
4- Bake at 350 degrees F (175 degrees C) for about 50 to 60 minutes, or until the apples are tender and the cake tastes done.

Spice-up-your-life truffles

should make about 24 truffles:

1/4 cup heavy cream
8 oz. dark chocolate,chopped into small bits
2 Tbsp. butter
1 tsp. cinnamon or chili powder
For decoration: use unsweetened cocoa
powder or sprinkles (since some people here like to decorate)

Over a low flame, heat the cream and butter. (Do not boil.) When butter is melted, add chocolate and stir constantly until the chocolate is smooth and melted, being careful not to boil or burn the mixture. Stir in the cinnamon or chili powder. Pour mixture into an 8 x 8-inch pan and cool in refrigerator until mixture hardens. Using a melon baller, scoop mixture into balls and roll in cocoa powder or sprinkles. Alternately, pour mixture into foil candy cups and cool in refrigerator.

Grilled salmon fillets with balsamic glaze:

1/2 cup balsamic vinegar
1/2 cup dry white wine
2 tablespoons fresh lemon juice
2 tablespoons (packed) dark brown sugar

6 5- to 6-ounce salmon fillets with skin
Olive oil

Combine first 4 ingredients in medium saucepan. Boil until reduced to 1/3 cup, about 17 minutes. Season glaze to taste with salt and pepper. (Can be made 1 week ahead. Cover and refrigerate. Rewarm over low heat before using.)

Prepare barbecue (medium-high heat). Brush salmon lightly with oil; sprinkle with salt and pepper. Grill salmon, flesh side down first, until just opaque in center, about 5 minutes per side. Transfer salmon to platter. Drizzle glaze over salmon.

CHOCOLATE-CHOCOLATE CHIP COOKIES

2 Cups flour
3/4 Cup cocoa
1tsp baking soda
1/2 tsp salt
2 sticks of butter,,,(room temp)
1/2 cup sugar
1/2 cup brown sugar
1 tbsp vanilla extract
2 eggs,,,,,(room temp)
3 cups chocolate chips
nuts and raisins (optional)

preheat oven to 350,,,,,
mix flour,,baking soda and salt in bowl,,,,,,, next cream butter ,sugar ,brown sugar and vanilla in a large bowl add eggs one at a time ,,,mix on med speed slowly add dry ingredents mix thoroughly,,,,, add chips..... roll dough into little balls flaten and place on cookie sheets and bake 11-13 mins (hint :use parchment paper on the cookie sheets ,, it stops the bottom of the cookies from burning) makes about 4 dozen

24 lady fingers (cake type)
6 egg yolks
1 & 1/4 cups sugar
1 & 1/4 cups marscapone cheese
1 & 1/3 cups whipping cream
1 & 1/3 cups espresso coffee (cooled)
2 tbsp brandy
1/2 cup cocoa
10 x15 Glass pan

Whip cream and set aside,,,,,, Cream the yolks and sugar until smooth,,,,,add the cheese mix on low two mins,,,,,, fold in the whipped cream ,,set aside,,,,, combine coffee & brandy in a bowl,,,,,,dip the lady fingers in the coffee brandy mixture and line the bottom of the pan,,,,, Spread the cheese mixture over the top of the lady fingers,,,, and sprinkle with cocoa,,,,, repeat for 2nd layer cover and refrigerate 4 hour (can be doubled to make thicker)

i love to cook, i'm just not very good at it. but what i lack in the kitchen i make up for on the bar-b-que grill, so here goes.

BAR-B-QUE PORK RIBS (fingerlickin, lip smackin, neighbor pesterin good)

1 rack pork ribs, about 9 lbs. total, the bigger the better (not baby backs cuz their for sissys)

1 big ass disposable aluminum turky roaster

'bout, mmmmm 3 cups B-B-Q sauce OR several sticks of hickory or other smokin woods (PSD gonga is not recomended)

1 grill w/2 racks (gas is easier to regulate heat on, and if u can regulate the heat on a charcoal grill, U DA MAN/WOMAN)

1 meat thermometer

pre heat ur grill while ur getting the other stuff ready

put the turkey roaster on the bottom grill fill about half way with water and make it boil.

put the rack of ribs on the upper level and turn the fire down LOW!!!!!! if u don't have an upper rack use a rack from another grill and just lie it on top of the turkey roaster

add the hickory to the lower level around the big ass turkey broiler, add as needed, close lid

in about 15 minutes check the temp in the grill through a small hole or opening in the grill. if it is more then 200 degrees SHE'S TOO HOT!!!!(this is where heat regulation comes in, ya gotta keep checkin the temperature of the grill to make sure it's on track)

cook for about 4-5 hours, check the temperature of the meat in about 3 1/2 hours pork is done when it is 180 degrees, but remember every time u open the grill u add 10 more minutes to the cooking time

OR instead of the smokin wood, 'bout 30 minutes before u think that ur gonna die of starvation slather the
B-B-Q sauce on.

BEER BUTT CHICKEN


WARNING: If you aren't sure you can handle a charcoal or gas grill and fresh poultry...
DON'T TRY THIS AT HOME - PLEASE!!!
It's a DANGEROUS procedure - especially if you are exceptionally clumsy or stupid
Here's one version of this recipe:

First thing to do is get yourself a medium-sized chicken. Clean it according to manufacturer's directions Season it with whatever you prefer (i.e. salt, pepper, garlic salt, etc...). Drink 1/2 can of beer, then refill the can with your favorite barbeque sauce. Insert the can in the bird's butt/rectum/ass/etc., and place the bird/can assembly on the grill CAREFULLY with the bird on top. This means the can is actually on the grill and holding up the bird.

Cook the bird for approximately 2 hours or until juices run clear. VERY CAREFULLY remove the bird, and use long tongs or pliers to remove the VERY HOT can from the bird. Save the juices from the can and pour them over the carved pieces of meat as a gravy.

hehehe and that's not the only thing i know how to do with butts.

Hey buck,,, I use both those recipes,,, I made the beer butt chicken a couple of weeks ago,,, I love it ,,,,and thats exactly how I make my ribs ,,,,but I put mine right on the grill the last 5 mins ,just to crisp them up a bit,,,,,,,

NAVY BEAN SOUP
1 package dried navy beans
ham bone with meat or chuck of ham cut up
2 med onions
2 med potatos
celery
carrots
salt & pepper
--------------------------------------------------------------------------------------------------
soak beans overnight,,,,,,,,,,,In a large heavy pot put 10 cups water add all ingredients and cook for 3& 1/2 hours

Ice Box Cake

A few people have asked me what this is,,,,,,,, It's Nabisco Famous Chocolate Wafers & fresh whipped cream together to form a log shaped cake

1 box Nabisco Famous Chocolate Wafers
1 1/2 pints heavy cream
1 cup sugar
------------------------------------------------------------------------------------
Whip the cream and the sugar and set aside,,,,,,,,,,,,, Now take each wafer put cream on one side and join together like a log should be about 17-20 inches long cover the entire log with the remaining cream And chill over night ,,,,,,,,,when serving ,,slice on 45 degree angle 1 inch slices and you come out with chocolate striped cake

BUCKS favorite cake

this is my Gma's german chocolate cake recipe, with a BUCK twist. lol

2 cups flour
2 cups sugar
2 eggs
2 sticks butter (room temp)
1 Tablespoon vanilla
4 Tablespoons cocoa
mix these together 1 cup milk, 1 teaspoon baking soda, 1 Tablespoon vinager let it foam a little and add to the mix
1 cup boiling water

mix all well and bake@ 350 for 45 minutes in a greased pan or untill a toothpick inserted into the middle comes out clean

NOW for the twist (leggy don't look)lmao

while the cake is cooling poke holes all over it with a big hole poker, like the handle of a wooden spoon, the bigger the better, mix up your favorite pudding, i like coconut cream, and pour into the wholes and over the cake AFTER it cools. smear on 1 can of your favorite pie filling, strawberry or cherry is good, top with a tub of cool whip and serve cold.

I must say that I'm summarily impressed by all the guys (psd, chaz, big buck and jason) baking CAKES! Odd that I've never in my LIFE been with anyone who could bake a cake...although some of them could "COOK"! *teehee*
