Well, like Youri said, 80/20 seems like a good estimate, but like someone else said, the amount of fighting should really kind of depend on the players actions.
If a group was acting law abiding and not picking fights with the local NWN equivalent of the Mafia, I wouldn't imagine them getting into too many fights in the cities, so don't throw in a fight or two just for the heck of it or to fill a quote. On the other hand, if the party is traveling through orc infested mines (woo for Moria!) or a forest crawling with God knows what, the amount of combat shouldn't be scaled down. Our little pixilated characters knew (or at least probably had some idea) of what they were getting into before they set off.
This might be kind of unrelated or it may go hand in hand, but one thing I really hope you guys can pull off is how different character types are handled by NPCs and the world in general. In UO, everyone seemed to be a fearless cynic who wouldn't blink if a mob of Drow stormed the town because they didn't have highlighting, or a puny thief would see nothing wrong with picking a fight with a hardened mercenary or knight, or any number of other situations that just made you wonder why that character would react how they did.
Example: I have two characters, Menahem and Lascuvi. I percieve Menahem as having that aura of this is not someone to be trifled with. Or, in the words of any cheesy fantasy novel, "he walked almost like a wolf, dangerous and seemingly always alert". If an NPC is easily intimidated, Menahem may be the guy for the job. My other character, Lascuvi, is one of those crazy Vistani, so anything he might try to do would be met by nearly complete distrust by all that know anything of his people's ways. But if another NPC is ignorant of these gypsies, or if my character were in disguise, he'd have a much easier time convincing them to do or tell him something then a soft spoken ranger, grunting fighter, or tree hugging druid.
Maybe these types of things are covered within D&D rules (Like within all these Charisma modifiers I keep reading about or a class modifier), but if they're not I have limitless confidence in our DMs NPCs to laugh off threats from someone that seems harmless or to turn tail and run if a barbarian starts getting angry.
