If you can record the sound of a program in stereo, then your duck has 4 heads. And On Screen programming has nothing to do with it.

Without getting technical, the stereo sound on VCRs (FM modulation really ) is lightly written with the video - you cannot overdub it or alter it in any way without at the same time erasing the video.

In this instance, 'lightly' means: the signal is written less 'deep' in the tape and therefore quite fragile.
There are chances aplenty that, ten years from now, the stereo 'tracks' will abruptly fade in & out, make funny noises and become quite a nuisance.

The mono sound is written on the bottom side of the tape, with the controls, sync and index signals - that's why you can overdub it without touching the video signal.

Although of a lesser quality (limited bandwidth) the mono track is far more resistant - you can't have your cake and eat it too :-)
