Why not just shoot in on Beta and digitize it later. With the introduction of digibeta, used beta camera prices have really come down.

Sony makes a couple of consumer-level mpeg-2 camcorder models which are as far as I know I @480.

Encoded resolution is just one of the factors that are important. The quality of the camera and type of lens are important. The robustness of the hardware encoder and bit rate are also important. CBR vs VBR is also an important issue. Much of the pixelation seen on DirecTV transport streams is due to the low bit rate CBR. One of the advantages of doing the digitization on your computer is that you are not bound by the bit rate capabilities of the digital camera used. For me the best setup for the money would be a beta camera, hardware mpeg-2 encoder, and VBR capability.
