When Buffy and Xander go out of the store to try and negotiate, the knights' acting leader speaks of ten men dead. We see Buffy ax one; presumably the rest died falling off the van )a bit unlikely given the slow spped, but---). In any case, I think Dochawk is right; the killings are in self-defense--and at the last extremity of self defense.
