In the audio commentary Joss Whedon said that he wanted to put Jesse in the opening credits for shock value but didn't have the time or the money to make two sequences. Putting Tara in the credits for the first time in the episode that she dies in probably goes back to this. Shock for those who aren't spoiled and a statement on how far Btvs has come that they now have the resources to make an extra sequence for one episode.
