there are a whole load of clever ways to catch crayfish. I don't know your location but there will most certainly be stringent local laws applying to you in this instance. moving crays around and keeping them alive - astaculture, can be very problematic and risky depending where you live. the easiest method to catch these little buggers is by using nets similar to the fyke net - frequently used to catch eels. crays are a mud bug - they will burrow into the bankside + or - waterlevel and at night they will forage all along that bankside for any food they can get. fyke nets work on the principal that the crayfish, eel, etc will walk into a wall of mesh, think "what the hell!" and wander down the netting to try and get round it. Little do they know that they have just wandered into further fixed net "funnels" commonly stretched / sewn around a D shaped bit of metal. Look these up on the web! If you use fyke nets, please make sure you don't leave these in the water for over 12 hours at a time as they will catch quite a number of crays and other species and can be quite stressfull to the occupants. On a good evening, I used to set my nets between 8pm and 10pm and collect at dawn the next day before going to the fish market. Each fyke net in a productive patch would yield 60 to 100kg. Make sure you also pay particular attention to gravid females and immature fish - releasing them to grow bigger or reproduce, therefore replenishing your sustainable supply of crays fish.
