Today's Recipe...

Zucchini Chocolate Cake

Metric Ingredient Imperial

625 ml all purpose flour 2 1/2 cup
325 ml sugar 1 1/3 cup
75 ml unsweetened cocoa powder 1/3 cup
5 ml baking soda 1 tsp
2 ml baking powder 1/2 tsp
2 ml ground cinnamon 1/2 tsp
1 ml salt 1/4 tsp
125 ml cooking oil 1/2 cup
125 ml milk 1/2 cup
125 ml butter, softened 1/2 cup
5 ml vanilla 1 tsp
2 eggs 2
500 ml zucchini, shredded (2 medium) 2 cups
- sifted powdered sugar -

Directions
Grease and flour a 13 x 9 x 2 inch (33 x 23 x 5 cm) baking pan; set aside. In a large mixing bowl; combine flour, sugar, cocoa powder, baking soda, baking powder, cinnamon and salt. Add oil, milk, butter and vanilla. Beat with an electric mixer on low speed until combined. Add eggs and shredded zucchini and beat on medium to high speed for 2 minutes. Spread batter into prepared pan. Bake in a 350 F / 180 C oven for about 35 minutes or until cake tests done. Let cake cool in pan on a wire rack. Sprinkle with powdered sugar.
