Here is an interesting twist on beets....
Today's Recipe...

Zesty Beets

Metric Ingredient Imperial

1 kg beets, 8 medium 2 lb
15 ml olive oil 1 Tbsp
7 ml red wine vinegar 1 1/2 tsp
- salt & pepper to taste -
60 ml low fat sour cream 4 Tbsp
- zest of 1 orange, minced -

Directions
Preheat oven to 400 F / 200 C. Place washed and trimmed beets on sheet of aluminum foil. Fold and seal tightly. Bake for 1 1/2 to 2 hours. Test beets with a knife. They should be tender but firm. Cool slightly and peel. Slice into 1/4 inch rounds and place in bowl. Blend oil and vinegar and pour over beets. Toss. Add salt and pepper. But beets on plates. Mix sour cream with zest. Place a dollop of mixture atop the beets. Serves 4
