Marlen’s Cuban-American Carne Fria

1 pound lean ground beef
1 pound lean ground pork
1/2 pound ground boiled ham
1 small yellow onion, grated
2 garlic cloves, finely minced
1 teaspoon salt
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1/4 teaspoon oregano
4 eggs, lightly beaten
1 cup cracker meal or dry bread crumbs

For breading:
5 eggs, beaten
1 cup cracker meal or dry bread crumbs


Preheat oven to 300* F.

Mix all ingredients well by hand except breading ingredients. Divide into three portions and roll each into a cylinder about 1-1/2" to 2" in circumference. This is facilitated by placing the mixture in plastic wrap to aid in the shaping. Place the rolled mixture in refrigerator in the plastic wrap until meat mixture is firm to aid in the breading (about 2 hours).

Roll mixture first in beaten egg, then in cracker meal or dry bread crumbs. Place each cylinder separately in aluminum foil. Close tightly. Place in ungreased cookie sheet.

Bake for about 1 hour. Remove from oven but do not open foil. Cool until it reaches room temperature. Place in refrigerator at least 8 hours or overnight.

Cut into slices and serve cold with crackers. Serves 12-14.

A very pretty presentation can be made by topping each slice with a hard boiled egg slice and a red pimiento strip placed over the egg diagonally.
