Yes, it is true that many vegetables in the interior of Alaska grow very large. This is due to the long days of summer which are mostly sunny and not cloudy. Last year at the local fair, the largest cabbage was something like 85 lbs. which was about 20 or 30 lbs. smaller than in previous years. The growing season is 80-90 frost-free days, so that sort of limits what can be grown, I am not familiar with artichokes growing here. Sweet corn is sort of hit-or-miss in Fairbanks, however it can be grown more successfully in Circle, which is like a few miles from the Arctic Circle on the Yukon River. When I was a child, my family grew corn, spring onions, potatoes, brussles sprouts, lettuces, broccoli, cauliflower, long beans, celery, sweet peas, chinese peas, cabbage, raspberries, radishes, Toklat and wild strawberries, rhubarb and carrots. All of these grew very well and in some cases, very large. More often than not moose would get to our cabbage family plants before we did. My father in-law has a very large greenhouse and grows tomatoes. The larger ones very often weigh 2 lbs. each. He probably grows 300 lbs./year. He has also grown sweet potatoes in his outdoor garden.
