Maybe you're just not spending enough time with your characters... you have to think about them until you know everything about them... one thing I like to do is imagine I'm directing a film, and I cast the characters and then I have to tell the actors who're playing the characters all the things they'll need to know;

-what does the character look like
-how old are they
-what sort of clothes do they wear
-how do they talk
-how do they move
-what is their history
-what is their role in the story
-what is their motivation
-how do they change through the course of the story

etc. etc. everything you can think of really

I believe (but it's just my opinion!) that if the characters seem real to you, you won't be able to write a plot that feels 'made up' because we'll be seeing it through the eyes of these living, breathing, feeling people (or monsters or whatever!)
