They might mean the branding iron in the shape of the Chevrolet insignia, as Chevy sponsored Bonanza. It was seen either before or after the actual opening credits. I don't know which seasons it was used, or how often.

In this clip the branding iron is seen prior to the opening credits. The episode is "The Deed and the Dilemma" from season eight.
