I usually do something similar with a leg of lamb. (Don't tell George.)

I generally marinade it in red wine and soy-sauce, for 24 hrs before cooking. I also spike it all over with a fine bladed knife, and stuff in bits of garlic and rosemary.

Or did I use the right tool for spiking various bits of Rosemary. And, STUFF THE LAMB. I know, I stuffed Rosemary, we drank the red wine, and you would be surprised what you can do, with a leg of lamb and some soy-sauce. Then we went out for a pizza. Oh, don't order pineapple on your pizza. Pineapple rings are far too erotic.
