Subject: Peanut Butter Pie

Peanut Butter Pie

1/3 cup peanut butter
3/4 cup powdered sugar
1 (9-inch) pie shell, baked
2 cups milk
4 egg yolks, slightly beaten
1/3 cup all-purpose flour
1/2 cup sugar
1/8 teaspoon salt
2 Tablespoons butter or margarine
1 teaspoon vanilla extract
1 recipe meringue (recipe with Coconut-Cream Pie)

In a small bowl, combine peanut butter and powdered sugar, stirring until crumbly. Sprinkle over bottom of pie shell. Set pie shell aside.
Preheat oven to 350°. In the top of a double boiler over boiling water over medium heat, scald milk. (Milk should be very hot, but not boiling.)
Pour a small amount of scalded milk into egg yolks; stir well. Add egg yolk mixture to remainder of milk in the top of double boiler; stir well.
In a small bowl, combine flour, salt, and sugar; add to milk mixture and whisk well. Continue to cook, stirring constantly, until custard mixture is very thick. Remove from heat and stir in butter and vanilla.

Pour custard into prepared pie shell. Top with meringue, making certain that meringue touches pie shell on all sides. Bake for 12 minutes or until golden brown.
