Subject: Meringue for Cream Pies

Meringue

8 Tablespoons sugar, divided
1 Tablespoon cornstarch
1/2 cup water
3 egg whites
1/8 teaspoon salt
1/2 teaspoon vanilla extract

In a small saucepan, combine 2 Tablespoons sugar with cornstarch; add water. Cook over medium heat, stirring constantly, until mixture is thick and clear.

Beat egg whites with salt and vanilla until soft mounds form. Add remaining 6 Tablespoons sugar, beating well. Add hot mixture and continue beating until meringue stands in stiff peaks
