Las Vegas Coconut Pound Cake


2 cups Granulated Sugar

2 cups Self-rising Flour

1 cup Vegetable Oil

1 cup Buttermilk

5 Eggs

1-1/2 teaspoon Coconut

Flavoring

1 cup flaked Coconut

Place all ingredients in a large mixing bowl and beat on medium until well blended. Pour into a greased Bundt pan and bake at 350 degrees for 1 hour. Remove from oven and immediately pour glaze over hot cake. Allow to cool in pan for one hour before removing to a plate.

Glaze:

1 cup Granulated Sugar

1/2 cup Water

1-1/2 teaspoon Coconut

Flavoring

Place ingredients in a saucepan, bring to a boil and cook for one minute; pour over hot cake.
