Upside Down Pineapple Cake

1 stick butter (use the real thing)
1 cup of light brown sugar
1/2 cup walnuts or pecans, if desired
1 20oz can of pineapple slices in it's own juice, reserve juice
Maraschino cherries

3 eggs, separated
1 cup sugar
1 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1/3 cup pineapple juice
1 tsp vanilla
1 tsp rum flavoring


A big very well seasoned cast iron skillet makes a good baking pan for this recipe.

Preheat oven to 350º

Melt butter in skillet in oven. Remove. Sprinkle brown sugar all over the bottom but do not mix up. Sprinkle nuts if desired. Arrange 9 pineapple slices over the bottom (it's ok if they have to overlap a little). Place cherry in the center of each pineapple slice. Set aside

Combine flour, baking powder and salt in a large mixing bowl. Set aside.

Beat egg yolks until thick. Beat sugar into egg yolks. When well combined, add to flour mixture. Stir in juice and flavorings.

In a third bowl, using clean beaters, beat egg whites until stiff peaks form. Fold beaten egg whites into cake batter gently.

Spoon batter evenly over pineapple slices. Bake for 45 min or until tests done. Cool in skillet on wire rack for 10 min or so and very carefully flip out.
