Pieroge Casserole:
1 pound of bacon( yikes)Cooked and crumbled
10-12 potatoes, boiled
3/4 pound of cheddar cheese( use low-fat)
2 stick of butter( or margarine)
2 onions finely diced
1 pound of lasagna noodles, cooked
Sour cream ( To serve on top)
Mash the potatoes, but do not add the milk or butter or anything else.
Once smooth add the cheese and beat with a mixer. Keep warm.
Saute the onions in the butter. When done add 1/2 of the onion/butter mixture to the potatoes. Salt and pepper to taste.
Generously butter a 13x9" dish. Place a layer of noodles on the bottom. Then a layer of potatoes. then sprinkle the bacon over layer. Repeat layering ending with noodles. Pour remaining butter/onion mixture over the last layer and sprinkle the top with bacon.
Cover with foil and bake at 350 for 30 minutes. Serve with sour cream.
