Extra Rich Chocolate Cake

Baked in a tube pan or in 4 layers, this makes a nice high cake, easily sliced. To make a 4 layer cake, divide the batter between 2 cake pans. Cut each finished cake horizontally to make 4 layers.

2 1/2 cups flour
2 teaspoons baking soda
3/4 cup cocoa
1/2 teaspoon salt
1 cup butter
2 cups + 2 tablespoons sugar
4 eggs, beaten
1 cup soured milk
1 teaspoon vanilla
1 cup boiling water

Sift flour once; adding soda, cocoa, and salt. Sift together 3 times. Cream butter; add sugar. Cream until light. Add eggs and beat. Add flour and sour milk alternately. Add vanilla and boiling water and beat. Bake in greased 10" tube pan at 375º for about 45 min. Frost as desired.

To make sour milk I use one ounce of white vinegar to 7 oz of regular milk and microwave for 30 seconds. If I have some milk that has turned sour I use that or freeze for later use. Soured milk is excellent in baked goods.
