Subject: Orange Bow Knots

Orange Bow Knots

1 yeast cake (1/4 ounce packet of active dry yeast)
1/4 cup warm water
1 cup milk, scalded
1/2 cup shortening
1/3 cup sugar
1 teaspoon salt
5 5-1/2 cups sifted flour
2 eggs, beaten
1/2 cup orange juice
1 tablespoons grated orange peel

Soften yeast in warm water. Combine milk, shortening, sugar and salt. Cool to lukewarm. Stir in about 2 cups flour and beat well. Stir in yeast, orange juice and rind, and remaining flour. Mix well. Cover and let rest for 10 minutes. Knead on lightly floured board. Place in greased bowl and let rise n warm place until doubled. Punch down, cover, and let rest 10 minutes. Roll dough out 1/2" thick. Cut into 10" strips, 1/2" wide. Tie each strip in a knot, arrange on greased baking sheet. Cover and let rise until doubled. Bake at 400º for 12 - 15 minutes. Spread with Orange Topping. Makes 24

Orange Topping.

2 tablespoon orange juice
1 teaspoon grated orange rind
1 cup confectioners' sugar

Combine orange juice, orange rind, and confectioners sugar. Blend well.
