Subject: Brownie Master Mix and Recipes

BROWNIE MASTER MIX
6 cups all-purpose flour
4 teaspoons baking powder
4 teaspoons salt
8 cups sugar
l (8-oz) can unsweetened cocoa
2 cups vegetable shortening
In a large bowl, sift together flour, baking powder and salt. Add sugar and cocoa. Blend well. With a pastry blender, cut in shortening until evenly distributed. Put in a large airtight container. Label. Store in a cool, dry place. Use within 10 to 12 weeks. Makes about 17 cups of BROWNIE MASTER MIX.

BROWNIES
2 eggs, beaten
1 teaspoon vanilla
2 1/12 cups BROWNIE MASTER MIX
1/2 cup chopped nuts
Preheat oven to 350 degrees. Grease and flour an 8 inch square pan. In a medium bowl, combine eggs, vanilla and BROWNIE MASTER MIX. Beat until smooth. Stir in nuts. Pour into prepared pan. Bake 30 to 35 minutes, until edges separate from pan. Cool. Cut into 2 inch bars. Sprinkle or frost with topper of your choice..Makes 16 Brownies.
(Variation: For cake-like brownies, add 2 tablespoons milk to batter.)

CHEWY CHOCOLATE COOKIES
2 eggs, slightly beaten
1/4 cup water
2 1/4 cups BROWNIE MASTER MIX
1/2 teaspoon baking soda
3/4 cups flour
1 teaspoon vanilla
Walnut or pecan halves (optional)
Preheat oven to 375 degrees. Butter baking sheets. Combine eggs and
water in
a medium bowl. Beat with a fork until blended. Stir in BROWNIE MIX,
baking soda, flour and vanilla. Blend well. Drop by teaspoonfuls 2 inches apart on prepared baking sheets. Put a walnut or pecan half in center of each cookie, Bake 10 or 12 minutes until edges are browned. Cool on wire racks. Makes about 36 cookies.
