Doing breaks between units would work just fine. In fact, I'm pretty sure there's someone using it that's doing just that.

Thanks for the nice compliments. I think that writing curriculum is my favorite thing to do. I went to school to be a school teacher and taught for 3 years, but didn't like all the politics involved. Then when I was pregnant started freelance writing. When Brittany was a baby I wrote for the neighbors section of our newspaper and toted her around town interviewing business owners and going to schools and churches. It was fun, but still not the perfect fit. Then when I started homeschooling Brittany, I quit writing for awhile, and did black and white photography out of my house. But writing is in my blood and I missed it. When I couldn't find the curriculum that I liked, that's when I knew I'd found my niche. I love education and I love writing, and it is such a joy to write education.
