Subject: Spicy pumpkin seeds

8 ounces hulled green pumpkin seeds
8 cloves garlic,unpeeled
1 tablespoon pequin chiles,or more to taste
2 tablespoons olive oil
1/4 teaspoon salt
Lime wedges

In a cold skillet,combine pumpkin seeds,garlic,chiles and olive
oil.Place over medium-high heat and cook,stirring frequently,until
the seeds have popped and most have begun to turn brown, about 8
minutes.

Using a slotted spoon,drain seed mixture on paper towels and then
place in a bowl.Toss with salt and serve warm or at room temperature
with lime wedges.They will keep a week or more in a tightly sealed
container at room temperature.
