Subject: Apple Salsa

2 medium red apples,such as a mixture of Red Delicious and Rome Beauty
2 tablespoons lime juice
1/2 cup chopped orange segments
1/2 cup finely chopped onions
1/2 cup finely chopped green bell pepper
1 finely chopped jalapeņo,seeds removed
1 clove garlic,minced
2 tablespoons fresh cilantro
1 tablespoon cider vinegar
1/2 teaspoon ground cumin
1 teaspoon vegetable oil

CORE the unpeeled apple and dice into 1/4-inch pieces. Immediately
toss with lime juice.

LIGHTLY CHOP the orange segments (use a mini-food processor if
available),then remove and discard all the stringy orange membranes.
Stir orange pieces into apple mixture.

MINCE the onions,using mini-food processor if available. Chop the
jalapeņo(minus the seeds and white membranes)and bell peppers
together.Add to apple mixture along with garlic and cilantro,which
should be chopped by hand.Stir in vinegar,cumin and oil.

CHILL 2 hours.Serve over fish,chicken or turkey.
