Subject: Smoked Sausage and Pasta

1 (16-ounce) package smoked sausage,cut into 1/4-inch-thick slices
2 cloves garlic,minced
2 cups broccoli florets,cut in 1-inch pieces
1/3 cup sliced green onions
12 ounces dried fettuccine
1/2 cup grated cheddar cheese
1/3 cup chopped green peppers
1/3 cup sliced black olives
1 (14-ounce) can diced and peeled tomatoes,slightly drained

SAUTÉ sausage in a large,heavy skillet over medium heat for 3 to 4
minutes.Remove from pan and set aside.Add garlic,broccoli, green
onions and green peppers;continue to sauté just until the vegetables
are tender-crisp.Remove from heat and stir in olives and tomatoes.

COOK fettuccine according to package directions.Drain.

SPRAY the bottom of a 9-inch round baking dish with vegetable cooking
spray.Layer cooked pasta in the bottom of dish.Spoon sausage
mixture on top of pasta,leaving a 1-inch border around the edges of
the pasta.Cover tightly and bake in a preheated 350-degree oven for
20 minutes.Uncover and sprinkle cheese on top of sausage mixture.
Return to oven and bake for no longer than 5 minutes,just until
cheese is melted.
