Subject: Boxty (Ireland)

"Boxty on the griddle.Boxty in a pan.If you can't make boxty,
you'll never get a man."A staple on the Irish farm,griddle boxty
will appear on Fiddler's menu from time to time.

1 cup raw potato,grated
1 cup cooked mashed potato
1 cup plain flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup buttermilk
2 tablespoons butter

Grate the potato into a bowl,and pour the buttermilk over it to keep
it from turning brown.Sift together the flour,baking powder and
salt.Beat the egg in a mixing bowl.Add the sifted dry ingredients,
grated potato,buttermilk and mashed potato,and mix well. The
mixture should be the consistency of thick pancake batter. Add more
buttermilk or sifted flour as needed.

Melt the butter on a griddle over medium heat.Drop spoonfuls of the
batter onto the griddle,spreading it to about a 6-inch diameter.
Brown griddle cakes on both sides.Makes about 8.
