Subject: BEEF STROGANOFF

1 pound round steak
1 clove garlic,peeled and cut in half
3 tablespoons flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 teaspoon paprika
1/4 cup shortening
1/2 cup onion,chopped
1 small can beef broth
1/2 cup water
1 pound fresh,sliced mushrooms
1/2 cup sour cream
2 tablespoons chives, finely chopped

Rub both sides of meat with garlic then cut into 1 1/2-by-1 inch
strips.Mix
flour,salt,pepper and paprika in small paper bag.Add meat strips and
toss
lightly until strips are well coated.Reserve remaining flour mixture.

Heat shortening in skillet.Add meat and brown.Add onions. Cook until
transparent.Add broth,water and mushrooms.

Cover and cook on low until meat is very tender,about 1 1/2 hours,
stirring
occasionally.Remove cover;add remaining flour mixture and continue
cooking
until mixture is slightly thickened.

Add sour cream and chives;stir.

Serve with boiled wide noodles or mashed potatoes.

Serves 4-5.
