Subject: Traditional Fresh Salsa (Mild-Medium)

1/2 onion
2 to 3 serrano chilies
Juice of 1 lime
1 tablespoon sugar
1 teaspoon salt
1/2 bunch cilantro(leaves and tender stems),finely chopped
5 Roma tomatoes

Finely chop the onion and chilies and put into a bowl.Add the lime j=
uice,
sugar,salt and cilantro.

Dice the tomatoes very finely(discard any juice)and add to the mixt=
ure
just before serving.Tomatoes should always be added last as the salt=
draws
out the juice.

Tip:This salsa should be eaten soon after prepared.
