Subject: Simmered Tomatillo Serrano Salsa (Medium-Hot)

1 pound tomatillos,husked
5 serrano chilies
1 garlic clove
1 avocado
1/2 bunch cilantro(leaves and tender stems),finely chopped
1 teaspoon salt

Boil the tomatillos and chilies in a saucepan with 1 cup of water unt=
il
soft,5 to 10 minutes.Drain.Blend with the garlic on low for 1 minu=
te.

Peel the avocado,but save the seed to put in the finished salsa.Add=
the
avocado flesh to the blender and blend for 5 seconds on low.

Combine the tomatillo mixture and the cilantro in a bowl. Add salt to=
taste.
Add the avocado seed(do not eat!)to preserve the color.
