Subject: APPLE STRUDEL

10 tablespoons melted butter(approximately)
4 large,tart apples
3/4 cup golden raisins
1 1/2 teaspoons freshly grated lemon peel
8 packaged phyllo sheets,thawed
1/3 cup plain dry bread crumbs
1/2 cup finely chopped almonds or walnuts
6 tablespoons sugar
1 1/2 teaspoons cinnamon

Preheat the oven to 400 degrees.Keep the melted butter over very low heat
to keep it hot and fluid(or use a turned-off burner on an electric range).

Peel,core and slice the apples into a bowl.Toss with the raisins and lemon
peel.

Place one phyllo sheet on clean dish towel.Use pastry brush to brush dough
with a film of melted butter.Sprinkle with some bread crumbs.Repeat until
four sheets have been used.Place half the nuts along a strip on the long
side of dough leaving a margin at each end of about 11/2 inches.Top the
nuts with half the apple mixture then sprinkle half the sugar and half the
cinnamon over the fruit.

Roll strudel by lifting towel and pushing it gently away, causing the last
roll to fall on baking sheet with strudel seam side down. Brush top with
melted butter.Repeat with remaining dough and apples.Bake for 30 to 35
minutes or until strudel is golden brown.Serve warm.(It is best to cut
strudel with a serrated knife.)Makes 2 strudel rolls.
