Subject: Sweet & Sticky Glazed Chicken

Vegetable oil
8 bone-in chicken thighs
1/4 cup apricot preserves
2 tablespoons orange juice
2 tablespoons lemon juice
1/2 teaspoon grated orange zest
1/2 teaspoon grated lemon zest
2-inch knob fresh ginger,grated
2 to 3 teaspoons coriander
1 1/2 teaspoons cinnamon
1 teaspoon ground pepper

Preheat the oven to 400 degrees.Line a roasting pan with foil and
lightly coat with oil.Pat the chicken dry.Place on the foil.

Combine the preserves,orange and lemon juices and zests, ginger,
coriander,cinnamon and pepper.Brush the glaze mixture under and over
the skin of the chicken,spreading it thickly and evenly.

Roast 20 minutes,brushing the tops of the thighs with additional glaze
every 5 minutes.Stop basting and continue to roast until the chicken
is cooked through,5 to 10 more minutes.Set aside for 5 minutes.Makes
4 servings.
