Subject: Souffle omelet

Makes 2 servings

4 egg whites
1/4 teaspoon cream of tartar
Salt and freshly ground black pepper
4 egg yolks,lightly beaten
1 tablespoon butter
1/4 cup finely shredded Gruyère(or any cheese you like)
2 tablespoons minced green onion or chopped chives

Preheat the broiler and place a rack in the lower half of the oven.

Beat the egg whites with the cream of tartar and salt until soft peaks
form.Gently fold in pepper(to taste) and egg yolks until combined.

Melt the butter in a large oven-proof,non-stick skillet over
medium-low heat,swirling to coat the pan thoroughly. Spread half of
the egg mixture evenly over the bottom of the skillet. Sprinkle lightly
and evenly with the cheese and minced green onion;then top with the
remaining egg mixture.Cook for two to three minutes,until bottom of
omelet is set and lightly browned.(Lift one edge with a spatula to
check -- and resist the temptation to use higher heat,as it makes a
tough omelet.)

Place the pan under the broiler until top is set and lightly browned,
two to three minutes.Serve immediately with toasted French bread and a
green salad.
