Makes 2 servings
This is a version of Mexican soft-scrambled eggs.

2 tablespoons olive oil or butter(or a mix of both)
1 small onion,halved and cut into thin wedges
2 soft corn tortillas,cut into strips(about 1" long by 1/2" wide)
Salt and freshly ground black pepper
4 eggs
2 tablespoons water
Bottled salsa or picante sauce
1 tomato, coarsely chopped
1 Haas avocado(or 1/2 Florida avocado),coarsely chopped

Heat the oil in a medium skillet over medium heat;saute the onion
until tender and translucent;then add the tortilla strips and stir
until they are limp and lightly browned.Season with salt and pepper.
Reduce heat to medium-low.

Beat the eggs with the water,plus salt and pepper to taste. Pour over
the tortillas and onions;stir until eggs are set.Top each serving
with salsa to taste.Stir together the chopped tomato and avocado,
season well with salt and pepper,and serve on the side.
