Subject: Spaghetti Pie

1 pound dry spaghetti
1/2 pound mozzarella cheese (or any combination of mild cheeses),shredded
1/2 cup Parmesan cheese,grated
2 eggs
1/4 cup whole milk
Salt and pepper to taste
16-20 ounces pasta sauce(see note)
Toppings(see note)

Preheat oven to 350.Bring 5 quarts of water to a boil and cook the pasta
until it is almost al dente.While the pasta is cooking, combine the eggs
and milk and whisk them together.Strain pasta and return to pot. Combine
egg/milk mixture,Parmesan cheese and seasoning with the pasta and toss
until pasta is coated.Grease a 10-inch glass pie pan with a small amount of
olive oil to prevent sticking,and then alternate pasta mixture and grated
cheese;finish with a small amount of cheese on top.Bake for 30 minutes or
until golden-brown on top.While the pie is cooking,heat prepared pasta
sauce.

When the pie is finished allow it to rest 5-7 minutes out of the oven before
slicing.Top with a generous amount of sauce and finish with the garnish of
your choice.

Note:The sauce will provide most of the flavor,so use your favorite,
whether it's a meat-style Bolognese,marinara or even an Alfredo or other
cream-based sauce.Add flair to the sauce or top the pie with fresh basil
chiffonade,crumbled bleu or other pungent cheeses(on top only),or a
roasted garlic olive oil drizzle or other additions.
