3-4 tablespoons olive oil
4-5 medium potatoes (skins on)
1 pound ground beef
1 can whole tomatoes with juice
1 medium onion,diced
2 bay leaves
Salt and pepper to taste

Slice potatoes 1/4-inch thick.In a hot skillet,heat olive oil, then add
potatoes a few at a time and brown lightly on both sides. Remove potatoes to
a plate as they finish.Add ground beef and brown.Add onion and bay leaves,
cooking until onions begin to soften.Chop tomatoes into chunks and add to
ground beef along with the juice from the tomatoes.Add potatoes and gently
stir into the beef mixture,add salt and pepper.Cover and lower heat to
simmer until potatoes are tender.Serves 6-8.
