Subject: Zucchini-nut muffins


Makes 1 1/2 dozen

3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
4 eggs
1 cup oil
2 cups grated zucchini
1 teaspoon vanilla
1 cup chopped walnuts
1/2 cup raisins

Preheat oven to 375 degrees.Line muffin cups with paper liners.

Combine flour,baking powder,baking soda,salt and cinnamon. In
another bowl,beat sugar and eggs for two minutes.Gradually add oil,
beating constantly for two to three minutes.Add zucchini and vanilla
and blend well.Stir in nuts and raisins.

Fold in dry ingredients just until moistened.Do not overmix.Spoon
batter into paper-lined muffin cups,filling them two-thirds full.Bake
for 25 minutes.Let muffins stand in pan for 10 minutes; then turn them
out onto racks to cool.
