Subject: hummus

3 medium to large garlic cloves,peeled
6 cups canned or cooked chickpeas,drained,with the cooking or the
can liquid reserved(4 15-ounce cans)
3/4 cup tahini paste(see note)
2 teaspoons cumin
1/4 cup lemon juice
2 tablespoons parsley
Salt and pepper,to taste

Process the garlic in a food processor until chopped.Add the
chickpeas,tahini,cumin,lemon juice and as much reserved chickpea
liquid as needed to make mixture smooth -- to your preference.A
firmer hummus is better for sandwiches,while a softer hummus is
better for dips and spreads,according to chef Collen Engle. Process
with parsley,salt and pepper until thoroughly blended.

Makes about 6 cups.

Serve in sandwiches or as a dip with a Middle Eastern flat bread of
your choice.

Tahini paste:Made from ground sesame seeds,tahini paste can be
found at most health-food stores and large groceries.
